The only known performance issue related to GrapheneOS is slightly slower initial app loading times due to improved memory isolation (https://grapheneos.org/usage#exec-spawning), and AFAIK even that is basically unnoticeable since Pixel 6. I've had a 7 Pro with Graphene and don't really remember having much performance issues, now running it on a 9 Pro XL and there definitely aren't any.
Never had issues with internet speed, it's the same as on all other systems

Are you actually using the Vanced Manager? Because if so, that has been outdated for a very long time at this point, and you should be using Morphe (the main recommendation nowadays, previously ReVanced) or one of the many open source YouTube clients
No crashes for me so far, but I only installed Graphene this week. Swipes work well, no delays and my internet works perfectly well. My home speeds are nowhere near yours, but I'm not seeing any issues or stutters.
I'm using Vanadium as my browser, but I don't use many apps, so I can't really help there too much. VLC is doing fine.

I have very spotty mobile internet where I am, and it is no worse on GrapheneOS as far as I can tell.
I don't use any streaming or Gapps on my phone anymore, so I can't help with the third issue.
I bought a 10a before learning about the no device tree stuff, used it for a few months and decided to go back to my 4a because I missed the tiny size and a lot of features from Lineageos. No regrets. New phones are too big and unnecessary.
I ended up with an 8a because it was the closest in size to the 4a of the still supported Pixels. Still slightly bigger and no headphone jack, so overall a downgrade, but at least it wasn't huge.

I can't say much about internet speeds, as I live in the middle of nowhere with 35Mbps download... But wifi is plenty fast - I have downloaded movies from my server at 50MB/s. If I have issues with internet as is, it boils down to actually shitty internet at the momebt or some DNS issues with my own server.
I don't use any ReVanced. I use Floatplane, Nebula, Jellyfin and Kodi as strwaming apps. Kodi actually doesn't work right now, don't know what the problen is, I don't use it much. I use Grayjay for Youtube.

Vanced is discontinued, ReVanced took its place -- try that manager if you're having problems. I just updated my YT and YT music with it recently.

Yes, my bad. I've used their YouTube and the Morphe YouTube and both have issue. I'm assuming that the problem is with playing as sponsored content.
