I found this series of article quite interesting and even got me to try these old OSes in the https://copy.sh/v86/ emulator again. It's sad how things have gone downhill in many aspects and it's not just Windows unfortunately.
I'm pretty sure that, after Windows XP, it went back pretty much to how it was in the 90s versions, with a dialogue for choosing a program. It might have been behind a "let me at the options, Windows; I'm a power user" button.
